Can I stop one person taking part twice?

Yes. Give each customer their own invite code instead of an open link.

Can I ask for the customer's email?

Yes, if you need it. A room can ask for contact details before the conversation starts. By default it asks for nothing.

How long is a feedback conversation?

As long as you choose. You set the longest a conversation in the room can run, within your plan's limit.
